What are the soft Hawaiian cookies served at Angel’s Ice Cream in Laie, Hawaii, called?
I was recently in Laie, Oahu, Hawaii. I had the delicious shaved ice (a Halo, to be exact…yum! I won’t ever look at a lowly snowcone the same ever again). When there I bought a few of their soft golden cookies. The girl at the counter told me what they were called, but I cannot remember! I’ve been searching the net for Hawaiian cookie recipes, but only find shortbread and other such recipes. This cookie was very simple — cake like and moist, golden, subtle and plain flavor. I thought she had called them paki paki, but that isn’t right. Any help would be appreciated!
They are Hawaiian Tea Cookies
Ingredients:
1 3/4 c. flour
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. butter, softened
1 c. sugar
1 egg
1 tbsp. lemon juice
2 tsp. vanilla
1 c. coconut
Combine flour, salt and baking soda. Set aside. In large bowl, cream butter and sugar. Beat in egg, lemon juice and vanilla until well mixed. Stir in flour mixture, then coconut. Shape dough in two 2 inch diameter rolls. Wrap and chill 4 hours.
With sharp, thin knife, slice dough 1/4 inch thick. Place 1 inch apart on lightly greased baking sheet. Bake in preheated oven, 375 degrees for 10-12 minutes or until slightly golden. Remove to rack to cool. Makes about 3 dozen.
